- Take 2 goat head (Cut into Bite size pieces)
- Take 3 cooking spoonful palm oil
- Get 2 Handful ukpaka
- Prepare 2 Tablespoon Ngó mix or potash
- Get 5 ehuru seeds
- Prepare 5 peice yellow pepper or red pepper
- Prepare 2 teaspoon black pepper
- Take 2 medium pepper
- Get 2 stock cube (crayfish or Beef)
- Take 2 handful grounded crayfish
- Get to taste salt
And since we do not want lots of water in the meat when done, it is better to cut the isi ewu up before cooking it. - Firstly wash the goat head thoroughly in warm water using hard sponge,setting aside the brain,put your ngo or potash in a water and allow to dissolve. Roast the ehuru seeds and finely blend in a blender or pound using a mortar
- Place your goat head in a large pot, add a Little water to the meat. Season with salt,one beef stock cube, onion,black pepper and yellow pepper,grated ehuru,crayfish and bring to a boil in a low heat, let the meat cook until it softens Add the brain into the pot of meat. When water is almost dry, remove the brain and pound in a mortar then set aside.
- Now Seive the ngo or potash mix to remove any residue then Set aside In another pot pouring in some palm oil and stir in the ngó mix or dissolved potash until a slightly thick oil result This resulting oil blend is called Ncha
- Add another round of blended/pounded ingredients (From step 2) then add the pounded goat brain, ukpaka, and utazi into the oil mix, while Adding the goat head meat keep on mixing clock wise then Season with maggi and a pinch of salt.I love mine slightly thick.
- Garnish the ise Eku with onions ring, upkaka and utazi leaf and enjoy with Palm wine😉
