  12. Take Spice Paste :
  13. Get 5 shallots
  14. Take 3 garlic cloves
  15. Get 2 bird eye chilies, to get a little kick or skip
  16. Take 5 candlenuts
  17. Make ready 1 thumb size of ginger
  18. Take 1 thumb size of fresh turmeric or 1 tsp turmeric powder
  19. Make ready 1 tsp coriander powder
  20. Prepare 1 tbsp salt
  21. Prepare 1 tbsp sugar
Steps to make Pepes Ikan Cod - Steamed Cod:
  1. Pat dry the fish really well and set aside
  2. Grind the spice paste ingredients using food processor until smooth. Put of oil to loosen the texture. Heat 3 tbsp oil in a pan. Sauté the spice paste, finely chopped coriander, kaffir lime leaves and bay leaves until fragrant. Add more salt or sugar if needed. Put a side and let it cool.
  3. Once the spice paste is cooler, add the egg, spring onions, tomatoes, baby corn and basil and mix well.
  4. Grab one piece of banana leaf (the size enough to wrapped 1 cod fillet). Add 1 tbsp the paste mixture. Add the fish on top then cover the fish with 2 tbsp paste mixture then wrapped the fish and secure on both edge with clean tooth paste. Repeat the same step with the other fish. Then steamed for 30 minutes.
  5. Grilled the steamed fish on the grilled pan for about 10-20 minutes.
  6. Serve with the warm steamed rice
