- Heat 2 tbsp olive oil in pan and cook halibut with lemon juice
- Heat remaining 2 tbsp. olive oil in another pan and sauté green beans & mushrooms. Season to taste with salt & pepper.
- Place squash on plate and top with halibut, green beans, & mushrooms.
- Sprinkle lemon zest on top for extra pop
