Instructions to make Rusk-Chocolate mousse cake:
- First in a heat proof bowl or (in microwave)add dark chocolate and melt chocolate with double boiler, stir until chocolate melted.Pour this melted chocolate in pot,tap it and keep it in refrigerator to set.
- Now take 1 cup of warm water in a bowl add coffee and sugar, stir until sugar dissolved completely.
- Now dip each rusk in coffee mixture and arrange all rusks over the set chocolate layer.Keep aside.
- Preparing chocolate mousse – in a heat proof bowl add chopped chocolate/ chocolate chips and 120 gms cream, place the bowl over a sauce pan with simmering water, stir until all the chocolate is melted.
- Meanwhile in a small bowl dissolve gelatin in cold water and let it swell about 5-10 mins.Now place the gelatin over low heat just until gelatin is dissolved.
- Pour it into the melted chocolate mixture and mix well.Let the chocolate mixture cool completely at the room temperature.
- Now in another bowl whip another 160 gms chilled whipping cream until stuff peaks form.
- Add whipped cream to the chocolate mixture and mix until well combined.
- Now pour this mixture over the rusk layer,tap it little, and keep it in refrigerator until set completely.
- After set completely, add whipped (icing cream) over the chocolate mousse layer and spread evenly from all sides.
- Now with a tea strainer sprinkle chocolate powder over it and garnish with some chocolate sprinkles. Keep it again in refrigerator to chilled.
- Delicious Rusk - chocolate mousse cake is ready to serve.
