Heat the oil with the tomatoe paste and stiring at the same time,add the grinded scotch bonnet and fry well,add hot water,the seasoning,spices, allow it to boil,wash the rice and add it to the boiling water,allow to almost cook,add the fish water(i will explain under the fish process),add the slized onion,cover and allow to cook and set aside.
- For the fish. Soak it inside hot water with 1tspn salt and allow to soak well for 10-15 minutes. Bring it out and remove any dirt and wash it in and out. pour 4tbspn water,seasoning and spices,dont add salt,i did not include it there,again the one soaked before washing is enough,again dont forget you are going to add it to the rice. put the washed fish and allow to cook for 5minutes,remove all the water and add it to the rice(i.e the water you will add together with the oion for final cook)..
- In thesame pot,add the oil,scoth bonnet and fry,add the slized onion and cook,add up the fish and allow to fry a little for 3 minutes,lastly add the ogu leaf,close the pot and keep aside,the remaining heat will cook it.
- For the coleslaw. Coom the eggs and give it a julliane cut,peel and give the carrot a long sized grating(u divide the carrots into two), slize the cocumber round and set aside the one for garnish and cut the remaining for the coleslaw,pour the mayonnaise and sugar,mix well and serve.
- For the garnish, i used round cut cocumber wit spinach cut. Bissalam
