Step by Step to make Beef & Cheese Chimichangas:
  1. Preheat oven to 180*C.
  2. Heat oil in a large non stick fry pan, add mince and cook well until well browned.
  3. Stir in burrito seasoning mix, 1/4 cup water, shallots and 1/4 cup almonds. Simmer for 3 minutes. Cool, then fold through cheese.
  4. Open burrito tortilla pack, throw away freshness sachet.
  5. Microwave tortillas in pouch on high for 30 seconds to make tortillas more flexible. Spoon 1/3 cup mince mixture into centre of tortilla. Moisten edges slightly, fold all ends in like a parcel and turn over.
  6. Brush Chimichangas with oil and place on baking tray lined with baking paper. Bake for 15/20 mins or until golden brown. Serve topped with salsa and extra shallots and toasted almonds. - Sensational!
