In this version of curried fish, the fish is first marinated with fresh herbs and garlic. It is then lightly floured and fried. After frying, the fish is simmered in a fragrant and flavorful traditional curry sauce which develops its flavors from tart mango, tomato, ochros, herbs including thyme, scallion and culantro and Caribbean seasoning peppers. Instructions to make Fish Mango Curry:
  1. In a blender blend ginger garlic and coriander to a fine paste and keep aside In the same blend blend onions and coconut and keep aside
  2. Heat oil in a kadai and add curry leaves and fry for a second. Now goes onion coconut paste and sauté for a min.
  3. Now add ginger garlic paste and stir fry for 2 mins in a low medium flame.Now add turmeric powder red chilli powder and sauté
  4. Stir fry the masala till oil starts to separate. At this point add cleaned salmon pieces and coat with the masala
  5. Mix with the masala and add little water. Cover with the lid and cook on a medium flame. When fish is half cooked add mango pieces and cook further till it is done
  6. Fish mango curry is ready to serve. Garnish with chopped coriander leaves. Serve with steamed rice or neer dosa
