- Slowly and the thin coconut milk and stir constantly till it comes together (in kiswahili we say tui lisikatike). Allow to simmer for a while till it's slightly reduced, about halfway
- Now add the heavy coconut milk and continue stirring also until it comes together and allow to simmer on medium low until it begins to thicken
- Season with salt and pepper as per taste.
- Add the fried fish in the stew to simmer so it can absorb the coconut taste(optional).
- Serve hot with an accompaniment of choice
