- Wash and clean the banana leaf and thaw it directly on the heat. Heating the leaf makes it flexible to fold. Place and layer the leaf inside the earthen cooking vessel.
- Clean the fish and apply turmeric, coriander, chilli, salt and gently massage it for the flavours to get it. Add the shallot, green chilli and curry leaves. Check for seasoning and adjust accordingly.
- Place the marinated fish on top of the banana leaf and pour the diluted coconut milk. Place the vessel on low heat and allow it to cook for 10 to 15 minutes until the coconut milk evaporates. Then pour the thick milk over it, cook for a minutes and switch off the flame.
- Delicious Fish in typical kerala style is ready to be served with steamed rice.
