- Get Coconut Oil for Shallow Fry
As kids, we used to crave for Porotta and Deep Fried Chicken from thattukadas (road side vendors). Chicken is marinated with masalas, deep fried in oil and served with Sliced Onions and a wedge of Lemon. Step by Step to make KERALA FISH FRY/AYALA PORICHATHU:
- Rub salt and clean the fish with water. Drain and keep aside. Mix all the spices, ginger garlic paste together and add lemon juice and a little water and salt to it. Make a thick paste. Make marks on the fish using a sharp knife and rub the spice mix paste all over the fish and marinate for 10 minutes or more if you have time.
- Heat a pan with coconut oil and when hot place the fish and cook until crispy and golden brown from both sides. Done !
Fry the fish to a golden brown color on both sides. Drain off the oil and transfer to a serving plate. Add more curry leaves and oil to fry the next batch of fish slices. Serve hot as a starter or as a side dish with rice dishes or rotis. Heat oil in a pan and shallow fry brinjal pieces till light brown color on both sides.
